Have you ever had one of those days where you have dinner planned out in your head, ingredients in the kitchen, but get to 3pm and think, ‘I can’t be bothered standing here cooking!’ That was me today, after having a great relaxing day, I thought to myself, lets just pick up a wee takeaway later.
Of course the frugal mummy side of my brain then kicked in, reminding me of the chicken that I defrosted for today. Together with the thought that a ‘wee takeaway’ for a family of 5, can total up to an easy £20-£25, I needed something quick to put in the slow cooker, before my little spark of energy burned out.
So here goes the quick (and super simple) curry!
- 1 medium onion, finely chopped
- 2 cloves garlic, crushed
- 4 chicken breast fillets, cut into chucks
- ground black pepper
- 1 tsp curry powder
- 1/2 tsp garam masala powder
- 1/2 tsp tumeric
- 1/2 tsp cumin
- 1 tin tomatoes
Heat a little oil in the bottom of a deep sauce pan or pot, fry onion and garlic until starting to brown.
Serve with homemade naan bread or some rice. Enjoy!
